The Old Bat’s Forgotten Kisses

These are meringue cookies that are awesome to make for Christmas because they are so easy! Preheat the oven, drop the cookies on cookie sheets, and go to bed!

2 egg whites
2/3 c sugar
( 1/2 tsp peppermint extract)
1 c chocolate chips
1 c chopped walnuts

Beat egg whites to soft peak then slowly beat in sugar until stiff but not dry.
If mint is your thing, at this point you can fold in 1/2 tsp peppermint extract
Fold in nuts and chips.

Drop batter by spoonfuls onto foil lined (or parchment covered) cookie sheets.

Place in preheated 350° oven. TURN OFF OVEN and leave cookies four hours or overnight.

Yield 4-1/2 dozen.

“Egg whites will not set properly when beaten if there is the slightest bit of yolk in them or if the bowl or beaters are slightly greasy or if a plastic bowl is used. For greatest volume bring egg whites to room temperature (get them out of the fridge one hour ahead of time.)” -TM
