I can’t believe it took me 41 years to figure out that there’s no need for meat on a sandwich, but such is life. My new favorite sandwich to go with my summer soups is a veggie sub. Mix and match toppings until you find your favorites.<\/p>\n

Lettuce<\/p>\n

Tomato<\/p>\n

Mushrooms<\/p>\n

Black Olives<\/p>\n

Roasted Red Peppers<\/p>\n

Avocado<\/p>\n

Red Onions<\/p>\n

Cheese ~ White American, Provolone, Cheddar, Mozzarella<\/p>\n

Condiments ~ Mayo, Guacamole, and\/or Italian Dressing<\/p>\n

If it’s cold and you would prefer a hot sandwich just throw it in the oven until the cheese is melted, or smash it in a George Foreman grill or panini press. Serve with soup for the perfect summer lunch.<\/p>\n","protected":false},"excerpt":{"rendered":"
