Preheat the oven, drop the cookies on cookie sheets, and go to bed!<\/p>\n<p>2 egg whites<br \/>\n2\/3 c sugar<br \/>\n( 1\/2 tsp peppermint extract)<br \/>\n1 c chocolate chips<br \/>\n1 c chopped walnuts<\/p>\n<p>Beat egg whites to soft peak then slowly beat in sugar until stiff but not dry.<br \/>\nIf mint is your thing, at this point you can fold in 1\/2 tsp peppermint extract<br \/>\nFold in nuts and chips.<\/p>\n<p>Drop batter by spoonfuls onto foil lined (or parchment covered) cookie sheets.<\/p>\n<p>Place in preheated 350\u00b0 oven. TURN OFF OVEN and leave cookies four hours or overnight.<\/p>\n<p>Yield 4-1\/2 dozen.<\/p>\n<p>&#8220;Egg whites will not set properly when beaten if there is the slightest bit of yolk in them or if the bowl or beaters are slightly greasy or if a plastic bowl is used.
