I make Mother Marie&#8217;s chicken pot pie all the time but I try to mix it up a little&#8230;this soup is a result of that.<\/p>\n<p>32 oz. organic chicken broth<br \/>\n1 pkg udon noodles<br \/>\n2 carrots, sliced thin<br \/>\nBaby Bella mushrooms, sliced (5 or so)<br \/>\nBok choy ( I actually grew it on my desk this winter)<br \/>\nShredded cooked chicken breast<\/p>\n<p>I had to add some bouillon because the noodles got big and starchy, and I think you could add tamari or soy sauce for a little more Asian flavor.
