{"id":139,"date":"2009-10-24T16:47:54","date_gmt":"2009-10-24T23:47:54","guid":{"rendered":"http:\/\/pdg.net\/catchatarian\/?p=139"},"modified":"2009-10-24T16:47:54","modified_gmt":"2009-10-24T23:47:54","slug":"pheasant-black-bean-soup","status":"publish","type":"post","link":"https:\/\/www.pdg.net\/catchatarian\/pheasant-black-bean-soup\/","title":{"rendered":"Pheasant Black Bean Soup"},"content":{"rendered":"<p>Pheasant legs and back with bones<br \/>\n4 bouillon cubes (2 Not-Chik&#8217;n and 2 Not-Beef, or 4 veggie)<br \/>\n1\/2 large onion, chopped<br \/>\n2 carrots, chopped<br \/>\n2 cloves garlic, chopped<br \/>\n2 leeks, white part only, split, washed, and chopped<br \/>\n2 ripe tomatoes, peeled, seeded, and chopped<br \/>\n1 stalk celery with leaves, chopped<br \/>\n1 can black beans<br \/>\n1 can black beans with cumin and chiles<br \/>\n5 cups cold water<br \/>\n1 teaspoon crushed red pepper<br \/>\n1 teaspoon cayenne pepper<\/p>\n<p>Place pheasant in shallow baking dish and brown in preheated 450 degree oven for about 20 minutes. <\/p>\n<p>Melt bouillon cubes in one cup water in four quart stock pot. Add onions, carrots, garlic, leeks, tomatoes, and celery. Saute over low heat for about 10 minutes, stirring occasionally. <\/p>\n<p>Add browned pheasant, beans, and cold water. Bring water to a boil, reduce heat, and simmer two hours. Remove scum periodically. <\/p>\n<p>Drain beans, add to pot, and simmer two and a half hours more. Stir occasionally.
