8 small white potatoes, cut crosswise into 1\/4″ slices
\n1 sweet onion, halved cut pole to pole into 1\/4″ slices
\n2 Tbsp. olive oil
\nSalt and Cayenne Pepper
\n4 Tbsp.\u00a0 butter
\nParsley<\/p>\n
Heat a large frying pan (preferably a cast iron skillet) over medium heat and add 2T butter. Add the potatoes to the pan and salt to taste.
\nSaute the potatoes for about 30 minutes until they get soft.<\/p>\n
Add the remaining butter to the frying pan and then the onions. Continue to cook until the onions are translucent, even caramelized if possible. Add cayenne pepper to taste.<\/p>\n
